Andrea and Christian Stanley of Hadley, MA's Valley Malt have proven to be invaluable partners to us throughout the years. Sourcing high-quality grain from farmers in the Northeast, their work allows us to support local agriculture without compromising on quality. With the recent formation of the Northeast Grainshed, of which both Trillium and Valley Malt are founding partners, there's no better time than the present to revisit farmhouse-inspired recipes featuring their malt. These recipes call back to many of the beers we produced from 2013-2016 while incorporating the many lessons learned since.
Highlighting a grist bill consisting of nearly 100% Valley Malt, Valley Triticale Saison presents a warm golden color with a bone white, frothy head. The nose is greeted with familiar estery aromas of bubblegum, clove, and a touch of banana that rest upon nuanced notes of crackling grain.
