To celebrate our Sixth Anniversary we're turning our attention to the states that make up New England. Six vibrant and bountiful states that are rich in agriculture, history and texture. The New England region echoes the pride and purpose that we feel in our day-to-day here at Trillium.
The Six States is an imperial stout brewed exclusively with ingredients grown, processed and supplied by independent producers located in New England. We're proud to have each state represented in the recipe, making this beer a uniquely crafted tour through our little corner of the world. A variety of malts were sourced from Vermont, Maine, Massachusetts and Connecticut, including wheat grown in Maine then milled at One Mighty Mill in Lynn, MA. The hops were grown here in Massachusetts at Four Star Farms, and two varieties of honey finish off the list, hailing from apiaries in New Hampshire and Rhode Island. Pouring a pitch black color with a dark khaki head and garnet highlights, The Six States emits a layered nose redolent with aromas of toffee, freshly brewed coffee and dried fruits. Elegant waves of roasted malts crash over the palate revealing flavors of toasted graham cracker, charred marshmallow, and treacle. Accompanying flavors of cocoa, fig, and raisin provide substantial depth while a woodsy hop profile balances the sweeter elements with a faint spruce tip bitterness. Medium-to-full bodied with a viscous mouthfeel and smooth carbonation, The Six States finishes with a satisfying, drying roast character.
