A dessert-inspired collaboration with our good friends from Garage Project, South Pacific Soufflé is a robust imperial stout brewed with a number of roasted malts and dark brown sugar. We conditioned this special beer on cacao nibs, Papua New Guinea vanilla beans, and Flight Coffee shipped express from the New Zealand roastery. Flight sourced an incredibly special coffee for this beer. Parami Natural, grown on the island country of Timor-Leste in Southeast Asia, won third place at the Timor Coffee Festival in 2020.
The end result pours an opaque jet black color with a khaki brown head. Swirling the glass, the nose is instantly welcomed by bold aromas of earthy dark chocolate, sweet vanilla cream, and fresh-brewed coffee. With each sip, layers of vanilla gelato, charred marshmallow, chewy dried fruits, and mocha latté wash over the palate, balancing the sweeter tones with a gentle roast character. Medium-bodied with soft carbonation and a viscous mouthfeel, South Pacific Soufflé has a long, satisfying finish that makes each returning sip a joyful exploration.
