Our collaborative partnership with The Veil, based out of Virginia, goes back many years. When first meeting head brewer Matt Tarpey, we were incredibly inspired by his creative brewing approach that continues to break from convention by pushing boundaries and methodologies. IwanttoBU blends Trillium’s familiar style and house character with The Veil’s unique brewing approach to create an incredibly flavorful and aromatic hop-forward beer with no kettle additions.
For 2023, we resurrected and re-invigorated our 0 IBU recipe for IwanttoBU DIPA with the inclusion of Citra Cryo & Simcoe Cryo to the original hop bill of Citra, Simcoe, and El Dorado. The nose is greeted with notes of tropical fruit, citrus zest, and delicate pine. Flavors of mango juice and ripe pineapples spill onto the palate, complemented with a backsplash orange and grapefruit. The beer finishes delightfully smooth with medium body and low bitterness.
