Andrea and Christian Stanley of Hadley, MA's Valley Malt have proven to be invaluable partners to us throughout the years. Sourcing high-quality grain from farmers in the Northeast, their work allows us to support local agriculture without compromising on quality. With the recent formation of the Northeast Grainshed, of which both Trillium and Valley Malt are founding partners, there's no better time than the present to revisit farmhouse-inspired recipes featuring their malt. These recipes call back to many of the beers we produced from 2013-2016 while incorporating the many lessons learned since.
Galaxy's distinct pineapple character is deservedly admired in many of our IPAs, but the Australian varietal has quite a bit of range. Brewed with Valley's wheat, raw wheat, and pilsner malt, this Dry-Hopped Saison is nimble and nuanced. We taste everything from the style's traditional clove and black pepper notes to fresh lime zest and pineapple gummies. A medium body is accented by a pleasant, mild bitterness that leaves us reaching for the next sip.
