Shell Game is an oatmeal stout brewed in collaboration with Island Creek Oysters. Oyster shells from Island Creek Oysters were ground up into a powder and added at the beginning of the boil. The oyster shells are made up of mostly calcium carbonate, which helps to neutralize some of the acid from the roasted malt used. This addition of oyster shells will help raise the pH of the beer and create a softer and smoother mouthfeel.
