Countess is a Belgian Pale Ale that takes inspiration from Belgian Trappist Ales. It is a delicious slightly sweet pale ale brewed with subtle, citrusy hops and then bottle conditioned with Brettanomyces. Brettanomyces (or Brett) is a yeast that is very different from other yeasts. While there are many different brewers yeasts that all have differing flavors they are almost all of the genus Saccharomyces. Without getting too scientific, Brett leaves a much more funky, “barnyard” flavor profile than other yeasts.
